No-Bake Energy Bites


These are always such a hit when we serve them at events! Children love making energy bites, and they are a great tool for introducing superfoods. These are versatile because they can be modified to anyone's liking.

Not a fan of chocolate? Try dried fruit instead!

flaxseed: great source of omega-3, high fiber, low carb

chia seed: source of plant based protein, omega-3, high fiber, high in antioxidants

T1D Note: 15 carbs in 2 energy bites

1 cup dry oats
2/3 cup coconut flakes
1/2 cup nut or sun butter
1/2 cup ground flaxseed
1/2 cup semi-sweet mini chocolate chips
1/3 cup honey
1 tbsp chia seeds
1 tsp vanilla

Combine all ingredients in a bowl. You can use your hands to mix it all together. Chill for one hour, then roll into balls about 1 inch in diameter. If the “dough” starts to fall apart when you roll it, add a bit more nut/sun butter to the mix. Store in the refrigerator for up to a week.
