Zucchini Boats


It's Meatless Monday, and today we're making zucchini boats!

We love any recipe that is customizable! You know those evenings where each member of your family seems to want something different for dinner? Make these! If someone in your home has allergies or you have a picky child, this recipe allows you to easily make a variation for everyone. 

Here's How to Make Them

  1. Preheat oven to 375 degrees.  
  2. Cut zucchini in half lengthwise and use a spoon to hollow it out, leaving 1/4 of the flesh.  Place into a large baking dish, cut side up. Lightly brush zucchini with oil. 
  3. Fill the zucchini with "whatever floats your boat".  
  4. Bake in the preheated oven for 30 minutes.
